Ginsu Katana offers four amazing collections to find the ideal match for your kitchen needs: Origins, Traditions, Heritage, and Legacy. Designed with precision and purpose, each knife is crafted to excel in a specific task.
Origins Line
Unlike the other collections of GINSU KATANA, the Origins collection of knives are right-hand, single bevel knives.
The Petty Knife: Great for mincing herbs, slicing vegetables and peeling fruits. The shorter blade is also great for small butchery tasks like deboning poultry and meat.
The Deba Knife: Great for cutting through fish bones, slicing up meat, cracking through shells, and dismantling chickens. The blade is thicker and heavier than other knives, making it easier to work with. The tip of the blade is used for dividing and slicing, while the base of the blade is used for tapping and cutting.
The Gyuto Knife: This knife is known as the âchef's knife.â When preparing vegetables, it is used for chopping or thrust-cutting near the heel of the knife. The Gyuto has a curved blade that smoothly rocks back and forth and has an extended tip for quick chopping that can be used to cut meat, fish, and vegetables.
Traditions Line
The Traditions Collection is the perfect place for your first purchase if you are new to Japanese knives. They are made with high-quality Japanese steel (440A) and a beautiful rosewood handle, both of which will prove they can stand the test of time.
The Utility Knife: Petty knives are the go to choice for mincing herbs, slicing vegetables and peeling fruits. The shorter blade is also great for small butchery tasks like deboning poultry and meat. This knife is best used for: chicken, fish, herbs, vegetables.
The Santoku Knife: What is a Santoku knife used for? Almost anything. A Santoku knife is one of the most versatile and commonly used kitchen knives worldwide. Due to their incredible ease of use, a santoku knife can be used for general chopping, cutting and slicing of most ingredients. This knife can be used to chop and slice vegetables, meat, and seafood.
Heritage Line
The Heritage knives are stars in the kitchen with their stunning AUS10 Damascus Japanese stainless steel blades that make every slice feel effortless. The handles were made with a full-tang design, making these blades both strong and perfectly weighted to do most of the work for you.
The Petty Damascus Knife: Great for mincing herbs, slicing vegetables and peeling fruits. The shorter blade is also great for small butchery tasks like deboning poultry and meat.
The Cleaver Damascus Knife: This 7" cleaver, known as the Chukabocho in Japanese, is best used for cutting meats, fish, herbs, and vegetables. The Chukabocho typically features a sharp and straight edge able for slicing, chopping, mincing and crushing its way through any vegetable, fruit and small-bone, thanks to the weight of itâs large wide blade. Thicker, and therefore heavier blades are best suited for general kitchen usage including medium-sized butchery work.

Deemed âthe knife that can do it all,â the Legacy Santoku made with 67 layers of AUS 10 Japanese Steel makes every cut and slice an absolute delight. This is also the only Ginsu Katana knife that comes with a wooden saya sleeve for storage.
