Summer Vegetable Stir-Fry with Citrus Soy Sauce

Ingredients:

- Vegetables:
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 zucchini, thinly sliced
- 1 yellow squash, thinly sliced
- 1 red onion, thinly sliced
- 2 carrots, julienned
- 1 cup snap peas, trimmed
- 1 cup broccoli florets

- Sauce:
- 1/4 cup soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- Juice of 1 lime
- 1 teaspoon sesame oil
- 1 clove garlic, minced
- 1 teaspoon fresh ginger, grated

- Garnish:
- 2 tablespoons sesame seeds, toasted
- 2 green onions, thinly sliced
- Fresh cilantro leaves

Instructions:

1. Prepare the Vegetables:
- Use your Ginsu Katana Santoku knife to thinly slice the red and yellow bell peppers, zucchini, yellow squash, and red onion.
- Julienne the carrots.
- Trim the snap peas and cut the broccoli into small florets.

2. Make the Sauce:
- In a small bowl, whisk together the soy sauce, rice vinegar, honey, lime juice, sesame oil, minced garlic, and grated ginger.

3. Cook the Vegetables:
- Heat a large skillet or wok over medium-high heat.
- Add a tablespoon of oil (such as vegetable or peanut oil).
- Add the red and yellow bell peppers, zucchini, yellow squash, and red onion to the skillet. Stir-fry for about 3-4 minutes until they start to soften.
- Add the carrots, snap peas, and broccoli florets. Stir-fry for another 3-4 minutes until all the vegetables are tender-crisp.

4. Combine and Serve:
- Pour the sauce over the vegetables in the skillet.
- Toss to coat the vegetables evenly and cook for an additional 1-2 minutes until the sauce is heated through.
- Transfer the stir-fry to a serving dish.
- Garnish with toasted sesame seeds, thinly sliced green onions, and fresh cilantro leaves.

- Serve the summer vegetable stir-fry over a bed of steamed rice or noodles.
